PROTEIN PACKED BANANA WAFFLES




Having a well balanced breakfast is so important to me because I am a huge advocate on being morning person. Starting your morning off on the right foot will make your day go by 10 times easier than if you were to sleep on the wrong side of the bed.


I came across this recipe for banana oatmeal pancakes when I had to be at the gym for a 6am workout, while working two jobs, 7 days a week and with no time to eat a proper breakfast, lunch or dinner.


I would find myself eating about 2 to 3 bowls of cereal a day to keep me going. NOT saying that a bowl of Honey Nut Cheerios are bad for you but when you eat, live and sleep with it, you might have a couple of bee related nightmare.



Even though so little go into making these Protein Packed Waffles, they do the job of keeping you full and fueled for your overwhelming day and can really be eaten at anytime of the day. I put a little twist to the recipe I found by making it vegan to cater to my bougie tastebud.


NOTE: I find it best to mix all the ingredients in a blender or hand mixer so that’s easier to pour. If you would like a little more texture to your waffles, you can always mix it by hand, if you don’t mind putting a little elbow grease in.


*can also be made into pancakes

Cook Time: 10 Mins

Serves Your Fine Ass

Vegan/GF


Ingredients

  • 1 Cup of Rolled Oats

  • 1 ripe Banana

  • 2/3 Cup of Plant Based Milk

  • ¼ Cup of Nut Based Butter or ¼ Cup of Plant Based Yogurt ( nut allergy)

  • 1/2 teaspoon of Cinnamon

  • 1/2 teaspoon of Ground Flaxseed and/or Chia Seeds

  • 1 teaspoon of Vanilla



Preparation

  1. Add Rolled Oats to blender and pulse a few times to make it a little finer ( oat flour)

  2. Add Cinnamon and/or Ground Flaxseed/Chia Seeds with a few more pulses to combine dry ingredients

  3. Combine Banana, Milk and Vanilla to blend on medium-high for 30 - 40 seconds.



If you’re preparing by hand:
1.Mash Banana in Bowl
2.In a separate bowl combine dry ingredients ( rolled oats, cinnamon, and Ground Flaxseed/Chia Seed
3.Add yogurt/nut butter, milk, and vanilla. Whisk until combined well.

I like to add a little of the oil from the natural butter I am using so that I wont have to add so much vegan butter or coconut oil when placing the batter into the waffle maker







Cooking:

Waffle Maker

  • Coat waffle maker with coconut oil or vegan butter ( solid, spray, or rubber brush)

  • Pour batter, wait until golden and enjoy








Stove top ( Pancakes )

  • Heat non-stick pan over medium heat and coat with vegan butter or coconut oil.

  • Pour batter into baseball sized circles.

  • Wait until you see bubbles on top then flip to other side.









SERVE HOT WITH MAPLE SYRUP AND ENJOY

Topping (optional):

  • Mix Vanilla, Yogurt and Honey in a small bowl until combined well.

  • Cut Fresh Fruit

  • Crushed/Shaved Nuts
