Summer Recipe : Bruschetta Remix

This summer snack takes 15 minutes to make and pairs well with finger foods that you can share or eat with a spoon.


Recipe: Bruschetta Remix





Ingredients ( serves 1):


1/3 cup Chopped Persian cucumbers

1/3 cup Chopped Heirloom tomatoes

1 tbsp of chopped Parsley

1 tsp Extra Virgin Olive Oil

1 tsp of fresh squeezed Lemon Juice

Salt/Pepper

1 tsp Balsamic Vinegar


Optional But Also a Game Changer: Chili Honey

( I used Apis Mercantile Honey )







The “No Disrespect To Bruschetta” Crostini


Sourdough bread - toasted with butter or EEVO


Combine all base ingredients (cucumbers, tomatoes, parsley , oil, lemon juice, salt, pepper, vinegar). Once combined let sit in the fridge for 10 minutes.



Place mixture on toasted bread, drizzle more vinegar and drizzle honey.


BONUS:


I also used some of mixture for a hummus and pretzel snack I made. YUM 😋
